Ok, this video is 5:21min long but you just have to see the first song (2:07 – 2:54).  It makes me laugh every time I watch it.  The rest is funny too.  It’s wonderful what you can find on the internet.

Every once in a while I feel the need to share something simple and delicious.  I think it was two years ago that my cousin-in-law Melinda’s Mother gave me a cookbook for Christmas.  It is called, “The three ingredient cookbook” written by Jenny White.  I have to admit that I didn’t open it for over a year.  (sorry Dorothy)  After all that time, I really forgot that I even had it.  I pulled it off my shelf in desperation one night hoping that it would hold the answer to my dinner problem.  The problem being that there was no dinner.  Lo and behold it did!  As a matter of fact it has a lot of great ideas.  Here is the recipe that I used.  I picked this one because I had a ton of tomatoes from my garden and I didn’t want them to go to waste. 

    Pasta with Roasted Tomatoes and Goat Cheese

8 Large ripe tomatoes
Pasta
Goat Cheese
There are your 3 ingredients……BUT this recipe is just screaming for some garlic!

Preheat oven to 375.  Place the tomatoes and garlic in a roasting pan and drizzle with olive oil.  Season well with salt and pepper.  Roast till soft and slightly charred.

Meanwhile, cook  your pasta.  Don’t forget to salt your water.

Slice up the cheese.  It will totally crumble but it doesn’t matter.

Roughly smash the roasted tomatoes.

Add pasta and gently stir in the cheese.

Enjoy!

Catching up

It’s been a while since I’ve posted and time has just been slipping through my fingers.  I have a lot of emails to catch up on and phone calls to make.  I started this morning and I feel slightly ahead of the game.  Today is gorgeous and when Ben wakes up, we are going for a long walk.  I love being outside and why not take advantage of all the colors and sun that is out there. 

Here is a memory of a few weeks ago that I’m so glad I captured.  Ben and Jack on the purple sled in Montrose, PA.  Their faces say it ALL.

New Friend

Finally REALLY got to see my friend Holly’s new baby today.  He was so adorable.  Content and happy was what he was and Ben thought he was soooooo cute.  Thanks Holly for making such a nice lunch and thanks to M for being such a great playmate with Ben.  He had a great time.

Asleep

Saw my new cousin yesterday and I can’t get her out of my mind.  She is the cutest thing EVER!  She was fast asleep the whole time we were there and it just soooo reminds me of Benjamin when he was a newborn.  Sweet cream breath and yawns that are so content.  ahhhhhhh

Flare Friday

There is a cool little group on Flickr called Flare Friday.  It is run by friend Kristen.  She really is the queen of flare and I admire her work.  She has an amazing eye and I find her photography delightful.  I love visiting her stream.  Check it out if you can.  I have a hard time getting cool flare because frankly, it gives me a headache.  Looking up into the sun and squinting – it is an ordeal and a half let me tell you.  I try every now and then and sometimes I even get lucky. 

Have a great weekend and don’t forget to break out your camera.  The colors are fantastic now and you never know what you might get.

Congratulations to my cousins.  Jared and Allegra welcome their new baby girl into the world today.  We were all waiting so patiently (or maybe not so patiently) for this day to come.  We are all thrilled and can’t wait to see her.
