			<content:encoded><![CDATA[<p>This past weekend we rented a cabin in the Poconos.  It was a great house with hardwood floors, a big kitchen and many many bedrooms.  There were ten adults and seven children.  The kids had a blast just being there.  Ben spent most of the weekend climbing up and down the staircase.  I guess since we live in a ranch this was exciting (go figure!).  The guys relaxed in the hot tub with beers and smoked cigars.  The girls had no part of that and hung out upstairs with some wine.  We rarely all get together like this so we ended up talking till way too late.  I have to say I got inspired by many of the conversations we had.  For instance: when I got home, I started redesigning the livingroom and basement, decided on some prints to blow up and hang on the walls, taped Baby Einstein (which Ben really liked - wink wink Beth) and tomorrow I&#8217;m going shopping!  On Sunday we spent some time at the lake.  It was cold and overcast but nobody cared.  We skipped rocks, threw a football and took lots of pictures.  I wanted to share this one photo of me and Ben.  I&#8217;m loving the fact I actually got one of us together.  I just love his big smile (thanks to Vesna for the jumping up and down trick).  This is just so Ben. </p>

			<content:encoded><![CDATA[<p>A few <a href="http://www.earthandskye.com/archives/182">posts</a> back I mentioned I would post more pics from the museum.  Well, I&#8217;ve been really behind on editing so I only have one for you today.  This is Ben making gigantic bubbles.  I thought it was cute because he looks like he is concentrating so much.  This was the first thing to do when you walked in and he was soaked for the rest of the day!  He even stepped in bubble solution with his new sneakers.  They were a soppy mess.</p>

<p>Picked up a crochet hook and some old yarn and didn&#8217;t stop till the hat was finished.  It took me one whole day.  I started at night then picked it up all throughout the next day and finished up by midnight.  I love how it came out.  I&#8217;ve seen these 3 pointed hats around but haven&#8217;t seen them without frilly, girly stuff on them.  I think they are so cute so I wanted to make a real boyish one.  I know what you are saying&#8230;..What about the pom poms.  Well, I like them and he is only 2.5.  I&#8217;m allowed!  It was so simple to make.  Basically just a rectangle then pinched at the top.  I have already started my next one for my brother-in-law.  It will be only 2 points beause he is NOT 2.5.  It will take me longer though because my hand hurts now.  Hope you can wait Samy.  That&#8217;s what I get for obsessing.</p>

			<content:encoded><![CDATA[<p>Every once in a while I feel the need to share something simple and delicious.  I think it was two years ago that my cousin-in-law Melinda&#8217;s Mother gave me a cookbook for Christmas.  It is called, &#8220;The three ingredient cookbook&#8221; written by Jenny White.  I have to admit that I didn&#8217;t open it for over a year.  (sorry Dorothy)  After all that time, I really forgot that I even had it.  I pulled it off my shelf in desperation one night hoping that it would hold the answer to my dinner problem.  The problem being that there was no dinner.  Lo and behold it did!  As a matter of fact it has a lot of great ideas.  Here is the recipe that I used.  I picked this one because I had a ton of tomatoes from my garden and I didn&#8217;t want them to go to waste. </p>
<p><strong></p>
<ul>Pasta with Roasted Tomatoes and Goat Cheese</ul>
<p></strong></p>
<p>8 Large ripe tomatoes<br />
Pasta<br />
Goat Cheese<br />
There are your 3 ingredients&#8230;&#8230;BUT this recipe is just screaming for some garlic!</p>
<p>Preheat oven to 375.  Place the tomatoes and garlic in a roasting pan and drizzle with olive oil.  Season well with salt and pepper.  Roast till soft and slightly charred.</p>

<p>Meanwhile, cook  your pasta.  Don&#8217;t forget to salt your water.</p>
<p>Slice up the cheese.  It will totally crumble but it doesn&#8217;t matter.</p>

<p>Roughly smash the roasted tomatoes.</p>

<p>Add pasta and gently stir in the cheese.</p>
